My friend, when you were a kid, where do you wish to go?  We both want to go to Disney and any other fun theme parks overseas.   But sometimes, we were influenced with what we usually see on TV on the things we want to have or the places we want to go to.  Yup! Television is powerful.  That is why I also want to go to Dakak Beach Resort because of its commercial I always saw on the noontime show my family watched before. That is one of the reasons why B and I chose to go to Dapitan City in Zamboanga del Norte, Mindanao for our annual summer getaway.

When I booked a discounted flight with Philippine Airlines going Dipolog City, the gateway to Dapitan City & Dakak.  We stayed at Dapitan City for a day and stayed at Dakak Park and Beach Resort for 2 nights.

Based on their website and Facebook page, their package already includes hotel pick-up and drop off and one-day pass to their sister park named Gloria Fantasyland.  Since we stayed at Home Sweet Home by the Bay, we arranged that they pick us up there.

The Php 5,500 per day Dakak ‘Ta Bay package given to us was expensive compared to the resorts we availed in most of our trips.  We were somewhat forced to avail of that package for our contact said it was their cheapest, only to find out that they have a cheaper room.  Anyway, we got we have paid for and more because it includes free buffet breakfast daily, can use their swimming pools and Jacuzzi, free one-day pass to Gloria Fantasyland, and the surrounding area of our private villa was quiet but near their restaurants and pool area:

We got our own cable TV.  We only have 2 channels available, ABS-CBN and HBO Asia.

The pools evoke fun that we maximized it and swam there for 2 days:

The area was serene since the resort was far from the city center:

And the beach was heavenly! The sand was fine, water was calm and clear and the atmosphere was serene!  Perfect area to unwind and forget the busy work life we have back in Manila:

We noticed that the waters were always calm.  Maybe because the beach is surrounded by cliffs and mountains which breaks the waves.  It is ideal if you want to swim at calm waters.  There is no stones at the beach nor at sea which means you can walk barefoot here.  The sand is cold to the feet, which is similar to the sands in Boracay, even if the sun is beaming hot .

Beach activities like kayaking, banana boat ride, jetski, and other activities were available for an additional fee which we did not asked nor availed since we want to relax and not do any strenuous activity.  But we did availed of their zipline adventure for Php 500 which includes a free 30-minute horseback ride going to the starting point. They claimed that they have the longest zipline in the country, and I guess they were right.  I think it took us more than a minute for us to land on the other end.  It was scary at first for our starting area was very high.  But once you’re released, you will enjoy the fresh breeze and the scenery of the mountains, its forest and the sea.

If you’re hungry, they have the Bamboo Restaurant that serves Filipino and international cuisines.  This is also the venue for their buffet breakfast and is facing the beach.

But if you have enough money, try their Italian Restaurant named Il Patio.

Il Patio Ristorante Italiano is their fine dining restaurant.  It is surprising to know that there’s a semi-fine dining Italian Restaurant at the beach cause I was used to seeing crowded bars.  The price was quite heavy on the pocket but it was so worth it!  Their pizzas were cooked the traditional Italian way.  The pizza crust of our Margherita Pizza was soft and chewy.  We never ate any other pizza like that in Manila.  Their ravioli was al dente and full of cheese and basil inside.  The entire meal was so simple yet so full of fresh flavor of its ingredients!  So far, Il Patio is the best Italian Restaurant I have ever been!

The resort was a surprise for me.  You can’t imagine that a quiet and laidback province like Zamboanga del Norte will have a world-class eco-resort hiding at the back of its mountains will full of modern amenities. Again, the fee we paid was super worth it!

KANTO FREESTYLE BREAKFAST: Affordable, kanto-fied meal

My friend, do you eat breakfast?  Well, I know some who don’t but that is the most important meal of the day that should not be skipped.  Breakfast is actually my favorite meal of the day that I can eat any breakfast meal at anytime.  A lot of restaurants specialize in this which you can enjoy even during lunch or dinner.  I have tried some of them but one that stands out is the very rugged Kanto Freestyle Breakfast.

This laidback breakfast joint is not new.  It started in a residential area at Mandaluyong City and the news easily spread out via referral from its neighborhood patron.  Now it has branches at Eastwood, Marikina and Pasig City.  I tried their mother branch but it was quite inconvenient for me to always go there.  So we tried their branch at 1st Street Kapitolyo, Pasig City.

B and I went there at around 8:00 AM and the place was already packed to the brim!  I’ve noticed that the place was full of young people working in a nearby Call Center.  This is not a surprise since the eatery is open 24/7 and also cheaper than any other restaurants in the area.

Unlike in their Mandaluyong branch, their Pasig counterpart includes 10% service fee to the bill.  The advantage of it is that all of the servers, including their bar maids, were extra friendly and accommodating.  We went there and there was a long queue.  But, we were given a number and a seat while we wait.  Service was fast, too!  Once a group left their table, their bus boy will clean the tables and arrange the chairs for the next customers to avail it.  But because of too many people waiting before us, B and I waited for 30 minutes but we really don’t mind because the turnover of guests and serving of food were fast.

Though they have a laid back atmosphere, you will notice that they made an effort to have a presentable plating.  That is something unexpected from a small eatery.

This is a surprise!  They have our favorite Filipino refreshment called Scramble topped with candy sprinkles, marshmallows and choco syrup served in a goblet for Php 35!

As a typical Filipino, we all love “silog” during breakfast.  That is, partnering any viand with garlic rice and eggs cooked in different ways (sunny side up, over easy, scrambled, poached, etc.).  I love that they cooked the eggs the way I want to which is hard, sunny side up.  But the garlic rice was not really cooked garlic rice.  It taste like a freshly cooked steamed rice drizzled with oil and mashed with toasted garlic.  Maybe because of the fast turnaround time they have with guests and maybe they want to ensure that food will be served in less than 30 minutes? Or maybe they lack kitchen staff that they opt to do a short cut version of their “sinangag” (that’s garlic rice in Tagalog).

Kanto Freestyle Breakfast is a proof that you can eat quality food with nice plating in a simple restaurant without breaking your budget!  So my friend, when can go there together?

Charity Work That Will Fill Our Hearts & Tummy

My friend, where are you?  Are you and your family affected by the recent earthquake or typhoon?  Glad to know that you’re safe and survived it.  As for me, I am safe together with my family.  Today, we are so addicted in watching the news lately to update ourselves about our countrymen affected by one of the worst typhoon in history.  I can’t help but shed tears to those in Leyte, Samar, Capiz, Iloilo and Northern Palawan who are grieving for the loss of their loved ones, their livelihood, and their town.

Before the storm happened, I already have plans to go out-of-town just to relax a bit and contemplate.  I am also stress with a lot of things that I am thinking of some activity to distress like a short travel or eat out.  Going on a travel is not the right time knowing that many are suffering.  Instead of spending it for a trip, might as well donate it.  So my other option is to eat to my heart’s content.  I love food!  I eat not only to nourish my body but to nourish my heart and soul, too.  I guess we all have our “comfort food” that we take to uplift out spirit.

So to hit two things I want to achieve: that is, to help others while I enjoy; I am planning to dine this weekend to some selected restaurants who commit to give a portion or all of their earnings to all Typhoon Yolanda victims.

It is called “Dine for a Cause” these eateries will not satisfy our tummy, but also serve our fellowmen that needs help.  My friend, here’s the list:

Amazing Things To Do Before *insert age or life event here*

My friend, what is the most amazing thing you have done in your life?  Did you have fun after doing it?  I am very sure you can still remember all the wild details of your adventure.  Glad to know that you did something really awesome.

It is fun to try out something different, those that you never done before.  It adds zest to life, makes it exciting, nerve-wrecking, eyes dropping, heart-pounding and more!  Once a while, you have to try out something different from your usual routine to make an ordinary day extra special.

As an active web browser chick who subscribe to “Thought Catalog“, I always see an article about the things to try out before reaching a certain age.  All of the suggestions were very creative.  It’s just that, in my opinion at least, you don’t have to do all of them before you reach a certain age, status or whatever.  If you have the opportunity, study it well and grab it!

To those who know me they describe me as a nerdy, church-goer, shy & goody-two-shoe kind of girl that obeys every detail that parents will say.  In short, a very very bland gal.  Well, that’s what they think.  Though I always play on the safe side, I also did some amazing things that not everybody had experienced before.  So for those like me who always play safe, the ones who don’t believe in the motto YOLO (You Only Live Once – fyi for the oldies.  Hehe), here are some things you can do that some I have tried.  Especially that I am seeing a lot of people scanning posts like this and also to give you some other options that is possible because I tried them.

HOLD ON!  Before you leave and tried these out, always consider your health and your budget.  It’s fun to enjoy them but make sure you take all possible precautionary measures for you not to get hurt physically, emotionally, financially, and will not aggrevate another person’s feelings or reputation.

Here’s my bucket list:

You may recall the movie or the book “A Walk To Remember” on the scene when the leading man named Landon Carter asked his lady love Jamie Sullivan to stand between the border of two states since this was one item on her bucket list.  Yeah, that can be done.  But to make it more exciting, I add this and number two at the same time which is:

My favorite travel buddies love the beaches at Patar, Bolinao, Pangasinan because of its serenity and ruggedness.  I believe that was in 2008.  We went there after a storm and after that town was devastated not only by the typhoon but also of tornado.  The path where the tornado went created a wide stream that connected the sea to the river.  An older friend of ours (we call him Sir Romie) told us that the other part of the stream was a river.  We did not believe him because we did not see any line or partision or border to see it.  He then challenged us to taste the water from two sides, and so we did.  The other part, the most obvious part was salty because it came directly from the sea.  But the other side of the small stream was not!  Nature is so mysterious in a beautiful way.  So we took this picture while we frolic on two bodies of water:

Lenten Season Food Suggestion: Tinakits’ Tuna Aioli Pasta

My friend, what’s the tradition you follow during Lent?  Lent is a Christian/Catholic six-week solemn observance of the Passion of Jesus Christ.  This starts on Ash Wednesday and ends on Easter Sunday.  It is a tradition for Christians/Catholics to prepare for this Holy season through prayers, penance, repentance, almsgiving and self-denial.  WHEW!  Heavy content, isn’t it?  Filipinos have rich traditions followed during this season because, in my opinion at least, it is the most solemn season of all.  Reason that makes Lent my favorite holiday of all.  Yup!  I love the Holy Week more than Christmas or New Year.

One of the many penitence that Filipino Catholics observe is to avoid eating four-legged animal’s and any fowl’s meat every Friday and the entire Holy Week (this starts on Palm Sunday and ends on Black Saturday) thus, resorting to serve fish, seafoods and vegetables only.  Unfortunately, not everybody eats these yummy treats from the land and sea so it is a challenge for the carnivorous people to think of what to serve during Lenten season.

I have so many suggestions for you but I choose to share this pasta dish of mine because this is the most popular and received the most number of positive comments of all whenever I cook and serve this.  Not only it is yummy, but also healthy – a sure winner for those body-conscious individual and for those who are trying to be fit this summer.  So here is my recipe for what I called TINAKITS’ TUNA AIOLI PASTA!

Tidbits: “Aioli” is of French origin. “Ai” means garlic & “oli” means oil.

INGREDIENTS:

Clockwise from top left: garlic, black olives, olive oil, butter, parsley, white wine, anchovies, tuna

1/4 kilo (250 g.) Uncooked Pasta

2 cans of Tuna Flakes in oil

1/2 a can of Anchovies in Olive Oil

2 tsp. of Anchovies Oil (included in the can of Achovies you will buy)

2 tbsp. Olive Oil

1 tbsp. Butter (salted or unsalted, whichever you prefer)

4 big cloves of Garlic, minced

12-14 pcs. of Black Olives, cut into small rings

1/4 cup of White Wine

Chopped Parsley Leaves

White Pepper to taste

INSTRUCTIONS:

1.     Cook pasta as directed on the package.  Set aside.

TIPS: Use spaghetti since this is cheaper.  Do not overcook the pasta but instead, undercook it, which means you cook it for 9-10 minutes only because we will still cook the pasta again later.

2.  In a pan over heat, put 2 tablespoosn olive oil & 1 tablespoon salted butter.

Putting olive oil before the butter ensures that your butter will not burn and will save the taste of it.

3.   Sauté 4 cloves of minced garlic, making sure it will not burn.

4.   Add 1/2 can of Anchovies (approximately 6-8 pieces) and 2 teaspoons of its oil.  Stir until the anchovies breaks.

Anchovies?  Yes!  I know you hate this very salty fish in your pizza but this is the main flavoring of our pasta dish.  It is small but very flavorful.   Once you sauté this, it will melt or break into small pieces which you will never see after the dish cooks and leaves the taste of the natural saltiness of the sea that is why no salt was indicated on the list of ingredients.

My opinion:   NO TO MSG!!!  That’s Monosodium Glutamate or “vetsin“.  I do not believe in using MSG!  Avoid it!  Any good and health-conscious cook will never use it.  Using MSG is a cheaters way of making any dish flavorful and will only bring danger to your health.

5.   Add 2 cans of Tuna Flakes in oil.  Stir and cook for 2 minutes.

Since I want a kick of chili to the dish, I used 1 can of plain tuna and 1 can spicy tuna flakes, all soaked in oil.  To make it more spicy, use 2 cans of spicy tuna flakes in oil instead.  If you hate spicy food, use plain tuna flakes in oil instead.

I have olive oil, butter, anchovies oil and tuna flakes in oil – isn’t it the recipe is too oily?  No, because it will be absorbed by the pasta later.  But if you still think it’s too oily, remove the oil of one can of tuna you will use.

6.  Add 1/4 cup of White Wine, do not stir.  Simmer for 2 minutes or until its alcohol evaporates.

Don’t worry, you will not get drunk in adding any alcoholic drinks to the food you’ll cook (unless you drink it, of course).  Try adding wine to your recipe and you will notice a different taste to it.  Since we are using fish in our dish, white wine should be used and any white wine will do.  What white wine to use?  Simply choose the one that taste well for you because you will also love the taste of it once we add it to our pasta.  But please don’t buy wine just for this dish.  Use the opened bottle of wine left on your fridge that you consumed the last party you hosted.  The wine I used is the one we consumed and left last New Year’s dinner.

How will we know if the wine’s alcohol already “evaporates”?  After 2 minutes, grab a teaspoon and taste the dish.  If you don’t taste any kick of alcohol, it means the wine already cooked and all alcohol disappeared, leaving only the taste of the wine.

7.   Stir in black olives & parsley.  Seasoned with ground white pepper to taste.

The black olives and parsley adds French flavor, look and feel to our dish plus it adds color to it.  In chopping parsley, make sure that you use a sharp knife so that the parsley will not create any juice while chopping it.  The easiest way to chop is to snip the parsley leaves with your kitchen scissors.

I used white ground pepper so that it will blend well with the color of our recipe. But if you don’t have this, you can use ground black pepper.  Anyway, the taste is the same as the white one.

8.   Add the cooked pasta and stir until it fully absorbed the sauce.

9.  Put pasta in a plate.  Add chopped fresh parsley leaves before serving.  Serve while hot.

Easy right?  Anybody can do this even if you are not a good cook!

As a rule, any pasta dish with fish or seafood does not require any cheese on it to save the natural flavor of  the ingredients because cheese has its own saltiness to it which might overwhelm the real flavor of our recipe.  But if you are a person who loves cheese, sprinkle Parmesan cheese once you serve the pasta.

I cooked it last night and my mother loves it!  Actually, she misses me cooking for I am very busy with my main work and with the constant roaming I’m doing recently.  So cooking became a way for me to bond with her.  I highly recommend this especially if you want your kids or anybody to appreciate eating fish, or serve this to that special someone who will celebrate their birthday this Holy Week while sticking with your diet and with your vow of not eating meat.  It is very easy to cook, you can prepare this as your packed lunch in school or in the office.

So check your pantry and fridge, go to the grocery, prepare all the ingredients and cook this for you to appreciate.
